Sri Lankan Roasted Curry Powder

Ingredients :
  1. 3 tbsp coriander seeds
  2. 1 ½ tbsp cumin seeds
  3. 2 tsp fennel seeds
  4. 1 ½ tsp mustard seeds
  5. 1 tsp fenugreek seeds
  6. 3 inch cinnamon stick
  7. 6 cardamom pods
  8. 3 cloves
  9. 1 tbsp raw rice
  10. 2 sprigs of curry leaves
  11. 3 inch panadan leaves ( Rampe) cut in to small strips
Instructions :
Keep a pan on medium heat and dry roast all the ingredients individually until it turns dark brown (not burnt). Put the roasted spices on to a baking sheet / a large plate to cool. Grind all the spices together in a spice grinder / coffee grinder. This curry powder keeps for long if you store it correctly in an air tight container in dark place.
Notes :
Please do not grind the spices in your coffee grinder which you grind your coffee in. Use a separate coffee grinder only to grind spices
